SUNDAY.

yesterday i…

  • made the best chocolate chip cookies ever.
  • made it through an entire week with zero caffeine and zero coffee.
  • had a peanut butter and jelly sandwich (my favorite) for lunch.
  • counted at least four bird’s nests up in the rafters on our porch.
  • made a huge mess in the kitchen.
  • kissed a sweet boy on the forehead while he was asleep.
  • got all the laundry done and put away before noon.
  • decided at 3pm to change from my crocs into tennis shoes so that maybe my feet would stop burning.
  • said i love you over 50 times.
  • ate some delicious food.
  • wanted to take a nap with grayson so badly but cleaned up the kitchen instead.
  • wished i had time to teach myself how to knit.
  • loved wearing vincent in our new baby wrap.
  • enjoyed having mom and dad over for supper.
  • took a nice hot bath.
  • planned to go for a walk but didn’t.
  • ended the night cuddling and nursing a precious 2 month old.

LAST NIGHTS SUPPER…

fresh from the garden collard greens along with some cornbread.  the best supper if i may say so myself.   so yummy and packed full of nutrition.  ooh – my mimi used to make these little fried cornbread patty fritter things.  mmm-mmm.  i need to get with my aunt sister on how to make those for next time.  i’ll have to show you more of what’s in our garden soon!

SWEET TOOTH.

i have been wanting a little chocolate and decided i would make some oatmeal fudge.  we don’t buy very much junk food.  and since i am breast-feeding vincent, i try to watch the sweets.  but i figured just a tad bit of oatmeal fudge would cure my sweet tooth, so i decided to make these divine little treats, since i had everything on hand.

combine the margarine, sugar, milk, and cocoa.

combine the oats, peanut butter, vanilla, and salt in a separate bowl.

bring the margarine, milk, sugar, and cocoa to a full rolling boil for one minute.

immediately pour the hot boiling chocolate mixture over the oats and peanut butter mixture.  i make sure that i cover the peanut butter real good with the hot chocolate mixture, because it helps soften and melt the peanut butter so that it’s a lot easier to stir.

stir together real well.  i sometimes add another spoonful of peanut butter as i am stirring if it needs it.  i can usually taste it and tell if it needs a little more or not.  also, the peanut butter helps to give the fudge their shape and hold it together real good.

i allow the mixture to sit in the bowl and cool down a bit while i’m starting some dishes or something.  then i drop the mixture by the spoonful onto wax paper.  i usually leave the fudge on the wax paper, and store them in a jar.  i shared a few with mom and dad, and along with joe and grayson, we had these eaten up within a few days.  they’re that good!  you should make some! :)
