THE BEST SANDWICH EVER.

i received a le creuset cast iron square skillet as a christmas gift a few years ago, and recently i decided i needed a panini press to go with it.  i had never made a panini until the other night.  i made chicken apricot paninis for supper and they were a hit with joe and my parents… so i thought i would make them again today, and share them here.

first, i sliced a loaf of french bread into big thick pieces.  i put about a half-inch slice of butter on each piece of bread and laid the buttered-side down on the skillet.  on the top side of the bread i put a good bit of apricot sauce… yum.  the sauce is tasty and so simple to make.  just mix equal amounts of apricot preserves and mayonnaise and stir together well.  that’s it.

i sliced some red onion and laid on top of the sauce… followed by chicken breasts that i grilled on the stove with butter and sage leaves.

i put another piece of  thick-sliced french bread on top of the chicken with another slice of butter.  i cooked the sandwiches on low heat, while the panini press heated on high.

once the panini press was good and hot, i laid it on top of the sandwiches, pressed it a little bit, and let it cook.

i have to say that it was the best sandwich i’ve ever had.  i’m sure there are tons of other ways to do it and a lot of panini recipes out there, but that’s how i made mine. kind of simple, but good. do you have any yummy panini recipes to share with me?  please do — i’d love to try some different kinds!
