PERFECT BLACKBERRY JELLY.

i am happy to update that i have been very busy making us a nice supply of blackberry jelly.  it is the best blackberry jelly i have ever had.  not many ingredients are involved in making your own jelly, but a good bit of time is.  it’s an all day messy process that does require some patience, but the end result of having pretty colorful jars of homemade blackberry jelly filling up my pantry shelves makes the all day messy process completely worth it.

HOMEMADE BLACKBERRY JELLY

to make the juice you will need:

4 cups of blackberries
5 cups of water
strainer
medium pot

to make the jelly you will need:

3 3/4 cups of juice
4 1/2 cups of sugar
1 box of dry pectin
mason jars and sealing lids
large pot

first you need to make the juice. to make the juice, lightly mash berries and cook in water in a medium pot over medium heat on top of the stove for about 20 minutes. then strain the berries through a strainer. throw away the berries and seeds. but save the juice!

now it’s time to make the jelly. measure your sugar exactly and set aside. measure the juice exactly. place the juice and pectin in a large pot. bring the mixture to a full rolling boil on high heat. stir constantly! stir in all of the sugar. return to a rolling boil and boil for exactly one minute… continuing to stir constantly. remove from heat and quickly pour into jars. wipe the jar rims and threads with a damp cloth. cover with two piece sealing lids and screw on tightly. process in a hot water bath for 20 minutes to make sure the jars are fully sealed. save any left over juice for a second batch! have fun and enjoy!blackberry jelly in jarshomemade blackberry jelly tastes sooo good, especially on a peanut butter and jelly sandwich. this has been a regular thing in our home every summer for the past few years. i am looking forward to continuing this little tradition. now what should i do with the other blackberries that are sitting in our fridge?  maybe a blackberry cobbler for sunday!
