SUMMER PEACH CAKE
you will need:
3 large peaches, peeled and sliced
3/4 cup + 2 tablespoon sugar
1/2 teaspoon cinnamon
1 cup all-purpose flour
1/2 cup unsalted butter or margarine, at room temperature
2 large eggs
first, place the peaches, 2 tablespoons of sugar, and cinnamon in a large bowl and toss. cream your butter and remaining sugar in a large bowl on high speed until light and fluffy. beat in the eggs, one at a time, until well blended. on low speed, mix in the flour just until blended. pour the batter into a greased square dish. arrange the peaches on top. bake for 50 minutes or until just lightly browned.

this cake was really good, and not overly sweet at all. i am sure i will make this again. we had ours warm, topped with a scoop of homemade vanilla ice cream. yum! for variety, use your favorite seasonal fruit. hope you are having a good weekend! be back soon. XO.
